Keep Calm and Un-hurry Your Curry with Japanese Curry Udon / 카레 우동

Um um um, it’s umanimous, you’ll taste heaven with this flavorful umami curry dish! An irresistibly rich, hearty broth houses both smooth noodles to slurp up, and tender pork belly for melt-in-your-mouth texture. Prepare a side of sliced pickled radish for a tangy addition to those aromatic bites, and turn boring curry into y-um(ami)!

Ingredients
1 tbsp Cooking Oil
7 oz Thinly Sliced Pork Belly
1 Onion, thinly sliced
1 tbsp Mirin
1 tbsp Soy Sauce
2 cubes Japanese Curry Cubes
3 cups Water
500 g Udon Noodles
4 tbsp Scallion, thinly sliced
½ tbsp Sugar
2 cloves Garlic, minced
1 tbsp Unsalted Butter
½ tbsp Katsuobushi Dashi Sauce

Garnish
Shichimi Togarashi, to taste
Fukujinzuke (Japanese Pickled Radish), as preferred
Rakkyo, as preferred
