Vermicelli salad with pork (Bun cha salad) / 분짜샐러드
Looking for healthy balance but craving taste? This Vietnam style noodle salad makes you forget it’s salad.
Ingredients (serving 2-4)
3-4cups Rice Vermicelli
0.5lb Thinly sliced pork (available at Hmart)
2cups Green salad
1/4 red onion, sliced
1/4 cucumber, sliced
1/2 carrot, julienned
1 red pepper, sliced
5 Cashew nut, crushed
1 stem scallion, chopped
Pork marinate sauce : 1tbsp sugar, 2tbsp soy sauce, 1/2tbsp fish sauce, 1tbsp lime juice
Dressing : 1cup water, 3/4cup sugar, 1/2cup fish sauce, 1/3cup lime juice, 1/3cup vinegar
1. Mix all marinate sauce ingredients and marinate pork with the sauce. Grease the pan and grill the pork over medium high heat.
2. Mix dressing ingredients. It’s called “boon-cha” dressing.
3. Cook fresh vermicelli for 5-10 seconds in boiling water. If you have enough time, soak the noodles in cold water for 30 minutes before boiling.
4. On a large plate, layer salad> noodles> pork> veggies> cashew and other garnish like red pepper or scallions.
Pour dressing all over before you eat. It’s simple, fresh, and balanced meal that will make you forget it’s a salad!
